Tailgate Recipe: SoCal Game Day Nachos

September is here, and you know what that means -- Chargers Football and weekend tailgate parties!

Feeding a whole household of hungry fans is never easy but fortunately, with help from our friends atVons, we have a great Southern Californian staple to help you tackle your way to an epic snacking victory.

Game Day Nachos Ingredients:

For the grilled meat:

½ cup Olive Oil

½ cup Lime Juice

1 tbsp Minced Garlic

1 tsp Black Pepper

1 tsp Kosher Salt

1 tsp Chili Powder

1 tsp Ancho Chili Powder

1 lb Chicken Breast

1 lb Flap Steak

 

For the nachos:

16 oz. Tortilla Chips (1 bag, restaurant-style)

8 oz. Cheddar Cheese, grated (about 2 cups)

Monterey Jack Cheese, (grated (about 2 cups)

½ cup canned black beans, drained and rinsed

1 medium tomato, chopped

½ small red onion, chopped

2-3 green onions, chopped

Cilantro leaves, as desired

Sour Cream, as desired

 

INSTRUCTIONS:

For the grilled chicken:

In a small bowl, whisk the olive oil, lime juice, minced garlic, black pepper, kosher salt, chili powder, and ancho chili powder together. Divide in half. Place the chicken breasts and flap steak in two separate resealable plastic bags and pour half the marinade over each. Toss to coat and marinate for a minimum of 4 hours or up to overnight.

Grill over medium-high heat, turning once until cooked through (approximately 4 to 5 minutes per side). Allow to cool slightly, then cut into ½-inch cubes.

To assemble the nachos:

Turn to grill to high heat. Place half the chips in the bottom of a large cast iron skillet and sprinkle with half of the cheddar cheese and half of the monterey jack cheese. Repeat these steps, creating a second layer, with the remaining chips and cheese. Sprinkle evenly with the cubed chicken, flap steak, and black beans. Grill until the cheese is bubbling and melted and the edges of chips are just starting to brown (approximately 7 to 10 minutes). Top with tomato, red onion, green onions, cilantro, and sour cream. Serve immediately and ENJOY!
